Video: Kimi Werner's Stuffed Uhu or Parrotfish

In MeatEater Season 10, Part 2, I take Steve and Cal out spearfishing for uhu, also known as parrotfish. Stuffed uhu is a classic backyard barbecue dish in Hawaii that incorporates sweet and savory flavors with lap cheong sausage, assorted vegetables, and a mayonnaise-based sauce. After the parrotfish is slit up and stuffed, we wrap it in banana leaves to add a unique flavor and prevent any of the contents from sticking to the foil while cooking.

If this fall-off-the-bone preparation is making you want to get out the speargun, check out some of the gear we used here. And if you haven’t watched the episode yet, it’s available on Netflix now.
