Video: Kimi Werner's Stuffed Uhu or Parrotfish

In MeatEater Season 10, Part 2, I take Steve and Cal out spearfishing for uhu, also known as parrotfish. Stuffed uhu is a classic backyard barbecue dish in Hawaii that incorporates sweet and savory flavors with lap cheong sausage, assorted vegetables, and a mayonnaise-based sauce. After the parrotfish is slit up and stuffed, we wrap it in banana leaves to add a unique flavor and prevent any of the contents from sticking to the foil while cooking.
