Grilled Heart 2 site

This Grilled Heart recipe was featured in our Hearts of Darkness Cooking Special. Enjoy!


1 heart from any hooved animal
olive oil
vinegar (white wine vinegar used in the episode)

Montreal seasoning:

4 tblsp salt
1 tblsp black pepper
1 tblsp onion powder
1/2 tblsp garlic powder
1/2 tblsp crushed red pepper
1/2 tblsp dried thyme
1/2 tblsp dried rosemary
1/2 tblsp dried ground coriander

Bell Pepper Boats:

red bell peppers
black beans
shredded mozzarella
cilantro, chopped


Grilled Heart:

1. Trim the tallow off the heart.

2. Core the heart.

3. Slice the heart.

4. Make the marinade: Combine olive oil, white wine vinegar,  and Montreal seasoning. Stir.

5. Add heart slices to the marinade — either in a bowl or in a vacuum-sealed bag for several hours.

6. Grill for about 5 mins per side — until the juices are still a little bit red.

Bell Pepper Boats:

1. Chop the onion and garlic.

2. Heat the black beans with chopped onion and garlic, cumin and salt and pepper in a pan.

3. Cut the bell pepper in half, core.

4. Brush with olive oil.

5. Put the peppers face down on the grill long enough to get some color on them.

6. Brush bottoms with oil and grill the peppers face up.

7. Fill the boat with the black bean mixture.

8. Grill until it heats through, then top with shredded mozzarella and close the lid for the cheese to melt.

9. Top with chopped cilantro.
