Ingredients:

1-2 lbs clams
flour
paprika
cayenne
fine ground corn meal
whipping cream
peanut oil for the fryer
cocktail sauce
lemon wedges
fryer with a basket

Directions:

  1. Make a dry batter of equal parts flour and cornmeal, then add some paprika & cayenne.
  2. Dip the clams into a bowl of whipping cream.
  3. Dredge clams in the dry batter.
  4. Throw into fryer basket until bubbling drops off considerably and batter is a golden brown
  5. Place onto paper towels to soak up extra oil
  6. Serve with lemon wedges and cocktail sauce
