SRME 403 Crab Frittata - Site

crab knuckles, parboiled
red peppers, diced
red onion, diced
basil, chopped
fresh oregano
fresh thyme
garlic, minced
1 whole tomato, sliced
8 eggs, lightly beaten
parmesan cheese, grated


  1. Crack the knuckles and pick the meat.
  2. Prep the veggies and herbs.
  3. Lightly beat eggs.
  4. Preheat the broiler.
  5. Sauté all veggies and herbs (minus tomato) in oil.
  6. Add veggies and herbs to the eggs.
  7. Add crab meat to egg and veggie mixture.
  8. Put oil in a large, flat frittata pan (that can go in the oven) and make sure the oil evenly covers the bottom.
  9. Pour egg mixture into pan, make sure there’s a ring of olive oil around the frittata
  10. Cook gently until bottom edges begin to turn golden brown.
  11. Top with sliced tomato and grated parmesan cheese.
  12. Pop into broiler until top begins to bubble and brown.
