Casing sausages used to be my least favorite thing about home charcuterie. I was always trying to make due with the stuffer attachments that work off grinders, which lead to much heartbreak and disappointment. But my notions about making sausage links changed completely when I discovered these vertical stuffers. Makes the process go cleanly, smoothly, and with way fewer blown-out cases. Reminds me of something that my father always said: “use the right tool for the right job.”
